A question about : Chicken safety

Ok so I have cooked a chicken (yesterday) and put the carcass in the fridge. and today I am boiling the carcass to make soup for tomorrow but I have just thought that means it was cooked then cooled then boiled so will it be ok to be reheated in soup when I want it? Might freeze it. I'm confused!!!

  • it will be fine in your soup - freeze the soup if you don't intend to consume it within a day or two. otherwise like any reheated food, make sure its really piping hot before serving it.

  • forgot to say that the stock itself will keep nicely for about a week in a covered container, in the fridge (I use those round 1.5ltr containers with the snap lock lids). once its mixed with other ingredients such as milk or cream it needs to be either frozen or used within a day or two.
    and well done on going the 'homemade' stock route! with some of that in the fridge you can make soup in twenty minutes or less.
