A question about : Peppermint Creams

Back on my quest to ruin the teeth of the nation (by the way we might need to find a moneysaving tip for dentistry if this carries on) title=Big.

heres an easy recipe for peppermint creams

1 Egg White
450g (1lb) Icing Sugar
Peppermint Essence or Oil of Peppermint

Beat the egg white until frothy but not stiff.
Sieve the icing, adding enough to produce a fairly stiff mixture.
Add a few drops of the essence or oil.
Knead the mixture in to a firm paste and roll on surface dusted with sieved icing sugar.
Cut into rounds or form small balls and flatten.
Place the peppermint creams onto parchment or silicon paper, place in a warm place to dry for 24 hours.
Store in an airtight container

As with all things with raw eggs in dont let pregnant women, young children etc have them.

  • .............but it does make them look pretty, especially if you put a couple of drops of green food colouring into half the mixture - so you end up with some white, some green. Dip them into chocolate (milk or bournville) then all you need is a nice cellophane bag and a bit of green ribbon and you've got something lovely for the school/church fete.

  • It was these and coconut ice at our school - that was the extent of our cookery lessons! I haven't seen those little squares of coconut sweets for years! I can't remember whats more memorable the lovely taste ot the coughing fit bought on by the coconut!

    4oz butter
    4oz Rice Crispies
    4 Mars Bars
    Melt, Stir, Cool, Eat!

    For really sickeningly sweet ones (Govt. Health warning required) add some of those mini marshmallows (a couple of handfuls).

  • I can't remember how to make coconut ice - i know there was pink food colouring involved which went great with a white school shirt
